Brown Sugar 4 Cups
Vanilla 2 Tablespoons
Salt 1 Teaspoon
Flour 10 _ cups
Pecans 8 cups
Jelly 2 cups
In a mixing bowl with paddle attachment cream together the butter and sugar for 10 min.
Crack eggs in separate bowl and mix vanilla.
In third bowl mix together flour, salt and pecans.
Add eggs and vanilla to the butter mixture.
Slowly add the flour mixture and mix until incorporated
Shape into balls and make a thumb print in the middle of the cookie
Bake in the oven at 350. When cookie is cool fill thumb print with any of the Lewiston Jellies
Catawba Salad Dressing
4 oz. Lewiston’s Catawba Raspberry jelly
1 cup olive oil
_ cup Red wine vinegar
_ Tablespoon oregano
_ Tablespoon basil
1 Teaspoon chopped garlic
1Tablespoon toasted pine nuts
Combine oil, vinegar, organo,basil, and garlic.
Melt jelly is sauce pan and add to vinegar and oil mixture, refrigerate
Sprinkle pine nuts over salad
Grape Jelly Barbeque Sauce
3 cups of Ketchup
_ cup Brown Sugar
3 tablespoons of Lewiston’s Concord Blackberry
3 Tablespoons of light Molasses
1 tsp. Worcestershire sauce
1 tsp. mustard
Combine all ingredients in a sauce pan heat up and brush on ribs or round steak
||Lewiston Peach Jelly Marinade
Tablespoon chopped red pepper
Tablespoon chopped green pepper
Tablespoon chopped yellow pepper
Tablespoon chopped red onion
Teaspoon crushed garlic
12 oz. Peach jelly
Tablespoon Olive Oil
1 cup pineapple juice
_ cup Vinegar
1 tablespoon parsley
Combine garlic, peppers, onion and oil place in a medium size sauté pan and simmer.
Add pineapple juice, jelly and vinegar
Bring to a simmer cool in refrigerator. Use to marinate seafood and chicken
Strawberry Honey Concord Cake
2 cups of sugar
1 cup of shortening
3 egg yolks beaten
8 oz. Lewiston Strawberry Honey Concord
1 cup of buttermilk
3 cups sifted flour
_ teaspoon baking soda
_ teaspoon salt
Cream together shortening and sugar add eggs beat well.
Add strawberry jelly beat well.
Sift flour, Cinnamon,baking soda, and salt.
Add flour mixture and buttermilk alternately.
Fold in stiffly beaten egg whites.
Fold in to creased baking tin.
Bake for 20 min. at 350 degrees
